Time for another installment in the New Dish Series. I made this last week after the hubs mentioned that he had tried this grain called farro.
I found a Giada De Laurentiis recipe via the Food Network and picked some up from Whole Foods -the land of one thousand grains.
Farro is a type of wheat that has a texture that is both firm and chewy.
This is how it looks after being cooked in salty water.
Tomatoes, parsley, chives, and basil. Also needed: onion and garlic. Chop and combine all herbs and tomatoes. I did not seed the tomatoes as was called for and I substituted lemon juice for balsamic vinegar.

Toss in cooked and cooled farro.
I served with my usual soy-veyed, boneless, skinless chicken breast (grilled over wood -you can never go wrong!), and kale with garlic.
