Oh my, today was a mother of a day involving all kinds of dreaded chores. All was made better when Kit got home from school and we did our pumpkin.
We carved using a drywall saw which worked like a charm. I guided it while Kit pushed it back and forth. It cut through the flesh very easily and made cutting very quick and satisfying.
As is our tradition, we then prepared the seeds for roasting.
Rinse with cold water.
Drizzle with olive oil and add copious amounts of kosher salt.
Bake at 375 degrees for 30 minutes. Tastes best when washed down with beer :)

We did the same last night ! also this year we boiled our seeds for 10 minutes before roasting them suppose to make them more crispy ...and we use paprika and salt :).
I'll have to try that next year. The boiling must make them less fibrous which would be a good thing (remember I said we have to wash ours down with beer) :)- -Caitlin
